OK - it seems what I tried to do about the notification emails didn't work. I don't mind receiving them because it lets me know you have messaged me if I'm not on Moodle. I'm not sure if there are some of you who would like to receive the notifications as well. So there are two things you can do - change the email to your own email address or turn off the notifications.
1. To change your default email: on the Moodle homepage click on the Edit Profile link in the Administration Block and change your email.
2. To turn off notifications: in the Admininstration block go to Messaging. Once in there you can choose which Moodle events you will receive notification prompts to your email. There are a lot of different notifications you can get besides the messages. For example, if a teacher marks an assignment submitted to Moodle it would send you an email to let you know. You control what you get notified of. There is also a General Settings at the bottom where you can temporarily turn off notifications altogether.
